We started with one rule: no shortcuts. Real butter instead of shortening, 45–55% dark chocolate chunks instead of chips, and small batches so every cookie leaves the oven with crisp edges and a centre that is still molten. Our cookies are fortified with chia seeds, and everything we bake is 100% vegetarian — with eggless, Jain brownie bites for anyone who needs them.
